Chef Jereme Leung debuts limited-time menu at China Blue in Conrad Manila

Conrad Manila proudly welcomes back celebrity chef Jereme Leung, who returns to the hotel’s acclaimed restaurant, China Blue by Jereme Leung, for an exclusive culinary showcase running from April 22 to 30, 2025. Known for his innovative take on Chinese cuisine, chef Leung presents a multi-course menu inspired by the flavors of Hangzhou—available for just nine days.

Brought in by Philippine Airlines, the official airline sponsor, Chef Leung’s comeback marks a rare opportunity for Filipino diners to enjoy his signature “East-meets-West” approach.

“With this menu, we strive to make our dishes unique yet accessible. Nothing is too complicated here,” the celebrity chef said. The goal is to surprise diners with ingredients from Hangzhou while ensuring every bite is delicious and true to Chinese culinary traditions.

Main Course: Slow-cooked duck leg with pickled olive dark sweet soy sauce.

The limited-edition “Master Chef Returns” menu highlights dishes like slow-cooked duck leg with pickled olive soy glaze and seared US scallop with spinach egg custard in dry scallop and ginger sauce. Each course blends regional Chinese ingredients with refined technique—elevated yet rooted in tradition.

Appetizers include suckling pig stuffed with black glutinous rice and salted egg, deep-fried sea cucumber with taro in hawthorn sauce, and a crisp tube of marinated vegetables with century egg and porcini mushroom. A nourishing soup of yellow croaker stock follows, before a trio of mains and a dessert centerpiece: a whimsical chocolate tree with pandan sponge and raspberry ice cream.

Appetizers: Suckling pig stuffed with black glutinous rice and salted egg, deep-fried sea cucumber and shrimp with taro in spicy hawthorn sauce,marinated preserved vegetables, and century egg with porcini mushroom sauce in a crispy tube.

Priced at P6,588 nett per person, the menu is available daily for lunch (11 a.m. to 2:30 p.m.) and dinner (6 to 10 p.m.).

Known for never repeating menus across his restaurants, chef Leung ensures that every visit offers something completely new. The new menu reflects his focus on flavor and freshness—no fluff, just seriously good food. “I’m more focused on having the food taste great, and not just beautiful for pictures,” he said.
