A quick Q&A with Chef Nobu Matsuhisa

It’s your fifth time in Manila. What do you like about this city? What are your favorite memories of Manila?

One of my favorite things about Manila is the energy—the city is always full of life. I love how passionate Filipinos are about food. Some of my favorite memories are from Nobu Manila. I love connecting with my team and guests here.

What are your favorite things that people have said about your food?

My favorite things people say are about the happiness they feel when they eat my food. Some people have told me, “I had my first Nobu experience 20 years ago, and I still remember how it made me feel.” That is very special to me because it means the food and the experience stayed in their hearts.

You’re a fantastic chef, but we’re curious—what are your favorite things to eat?

I keep it simple at home. I like to cook fresh fish with rice and vegetables.

What’s the best thing about being Chef Nobu?

The best thing about being me is that I get to share my passion for food with people all over the world. Cooking is my life—it has given me the opportunity to travel, meet incredible people, and experience different cultures. Through my restaurants, I am able to connect with guests from many backgrounds and bring them joy through my food.
