I like how Ambeth always has a historical twist to a story—one that is personal but both interesting and factual. On the matter of Manila and Cebu being the first and only metropolitan areas included in the Michelin guide, it’s probably because both are the largest in terms of population and economy.

Michelin can always come back here and they will be welcomed by Iloilo and Pampanga if they ever visit there. Give them time and a two-way door to fully explore the Philippines in the years to come. They are not even invalidating our cuisine, and instead is promoting it.
