Helmed by chef Kevin David, Idalia brings its contemporary Italian take to the Chef’s Table at The Balmori Suites for a three-week guest takeover.

And he does so by serving a menu of handcrafted pastas, focaccia bread baked fresh in-house, its signature hummus, and thoughtfully composed plates that celebrate Italian flavors through a modern lens. Think ‘nduja made spicy with local sili labuyo or locally sourced mussels, among others.

Happening until July 31, the pop-up will feature some of Idalia’s bestselling dishes, alongside Balmori exclusives that echo the restaurant’s signature technique and soul.

Must-have dishes at the pop-up include the signature focaccia-sourdough hybrid of Idalia, served with an anchovy butter that blends lemon, parsley, and garlic confit; the mussels with house-made ‘nduja and preserved lemon (you can even use the focaccia to mop up the sauce); the bucatini alla amatriciana—made with guanciale, fermented tomato, and pecorino.

And for the garlic fans, the rigatoni with black garlic, anchovy, and brown butter will tide you over nicely.
